Slow Cooker Chicken Tikka Masala

Hands down the BEST slow cooker meal I have made in I don't even know how long honestly!!  I am going to mess with the recipe to put together a vegan version!!

What You Need:

  • 5 boneless, skinless chicken breasts, cut into 1-inch chunks (about 3 pounds)**
  • 1 small onion, finely chopped
  • 4 cloves garlic, minced
  • 2 Tbsp. fresh ginger, grated
  • 1 (28 ounce) can tomato puree
  • 1 1/2 cups plain Greek yogurt
  • 2 Tbsp. olive oil
  • 2 Tbsp. Garam Masala
  • 1 Tbsp. cumin
  • 1/2 Tbsp. paprika 
  • 2 tsp. salt
  • 3/4 tsp cinnamon
  • 3/4 tsp fresh ground black pepper
  • 1 tsp cayenne pepper (more if you like to spice things up a bit)
  • 2 bay leaves
  • 1 cup half & half (or heavy cream)
  • 1/2 Tbsp. cornstarch
  • Serve over brown rice
  • Garnish with chopped cilantro

What You Need To Do:

  1. In slow cooker add onion, garlic, ginger, tomato puree, yogurt olive oil, Garam Masala, cumin, paprika, salt, cinnamon, pepper, and cayenne.  Stir or whisk together until sauce is thoroughly combined.
  2. Add chicken, and stir will to coated with sauce.
  3. Add bay leaves.
  4. Cover and cook for 6 hours on low or 3 hours on high.
  5. During last 20 minutes of cooking, whisk together half & half with cornstarch, and add into crock pot, combining thoroughly.  Cover and finish cooking for 20 minutes.
  6. Serve over brown rice, with garnishes of cilantro, if desired.

Additional Notes

Chicken thighs could be used as well.
* *Vegan substitutions can be made with tofu - I still want to experiment with lentils added in!

Shakeology Pancakes made with Pancake Mix

Makes about 6 pancakes

 What You Need:

  • 1 Serving Vanilla Shakeology
    1 Serving Chocolate Shakeology
    1 Cup Fiber One Pancake Mix
    3/4 cup water

What You Need To Do:

  1. Mix all ingredients thoroughly in a bowl and cook according to Fiber One package directions.
  2. Drizzle with Maple Syrup to taste

Additional Information:

You can use any pancake mix you want, but Shakeology customers find that the Fiber One mix has the best combination of taste and healthiness.

    • Natural Peanut Butter
    • Fruit

What You Need To Do

  1.  Mix egg whites, Shakeology, water and agave or stevia
    2.  Cook on medium heat
    3. Drizzle with optional toppings

Shakeology Brownies

What You Need:

  • 1/3 cup cocoa powder
  • 1 scoop Chocolate Shakeology
  • 1 T honey
  • 1/3 cup water
  • 1 egg
  • Dash of Cinnamon (if desired)

What You Need To Do:

  1. Preheat oven to 350 degrees F.  Spray a bread load pan with non-stick cooking spray.
  2. Mix ingredients together and then spread in pan.  Dough will be thick.
  3. Bake for 8-12 minutes, checking frequently until preferred consistency.

Pumpkin Oat Chocolate Chip Bars - Vegan & Gluten Free!

These are SO delicious!!  Now that fall is here, everything is pumpkin this and apple that!!  So I have been researching recipes and found this amazing one, that are completely vegan free & gluten free!!  These are made with oat flour and no butter!

I made 3 batches within 4 days -- YES, I SHARED!! And everybody loved them, especially my mother!!

Serves: 16

What You Need:

  • 3 cups gluten free oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • pinch of ground cloves
  • 1 cup canned pumpkin (not pumpkin pie mix!)
  • 2 tsp pure vanilla extract
  • 1/2 cup dark brown sugar
  • 1 Tbsp olive oil or coconut oil
  • 1/3 cup vegan chocolate chips, plus 2 Tbsp for sprinkling on top

What You Need To Do:

  1. Preheat oven to 350 degrees F. Spray 8x11 or 9 inch baking pan with nonstick cooking spray.
  2. Make oat flour: Place oatmeal into blender or food processor and blend for 1-2 minutes until oatmeal resembles flour. You may need to stop blender and stir oats a couple of times to ensure that all oats have been blended.
  3. Measure out just 2 1/2 cups of the oat flour and place in a medium bowl. Whisk in baking powder, baking soda, salt and spices; set aside.
  4. In a separate large bowl, whisk together pumpkin, brown sugar, vanilla extract, oil, and applesauce for 1-2 minutes until the consistency is smooth and creamy. Slowly add in oat flour mixture and mix until just combined.
  5. Gently fold in 1/3 cup of chocolate chips. Pour batter into prepared pan and sprinkle remaining 2 tablespoons of chocolate chips on top. Bake for 15-25 minutes or until knife inserted into center comes out clean or with just a few crumbs attached. Timing will depend on what size pan you use, but definitely check around 15 minutes. Once finished baking, cool 10 minutes on wire rack. Cut into 16 slices.

Additional Information

Bars can be frozen. Simply bake, cool, cut; store in ziploc bag. Reheat individually for 30 seconds in microwave.

Zucchini Spaghetti with Lentil Marinara

This meal is *vegan* and so ridiculously easy to make!!  Which makes enjoying it all that much easier!  I was a little hesitant when I made Zucchini Lasagna -- so was my boyfriend even though I had nothing but rave reviews about it!!

So the moral to that story - don't knock it until you try it! ;)

Servings 2-3 (depending on hungry you are!!)

What You Need:

  • 1/2 cup Dried French lentils
  • 1 cup Water
  • 1 Tbsp. Olive Oil, divided
  • 1 small medium yellow onion, diced
  • 2 garlic cloves
  • 15 ounces Organic Tomato Sauce
  • 1/2 to 1 tsp Dried Basil
  • 1/2 to 1 tsp Dried Oregano
  • 1/2 tsp Dried Thyme
  • 3 medium Zucchini, made into pasta!
  • Salt & Fresh Ground Black Pepper, to taste

What You Need To Do:

  1. Add lentils and 1 cup of water to a small or medium pot. Bring to a boil and then lower to a simmer and cook until lentils are tender and liquid is evaporated, about 20-30 minutes.
  2. Meanwhile, add 1/2 tablespoon olive oil to a pan over medium heat. Add the onion and saute for 5 minutes, or until translucent. Add the garlic cloves and saute for an additional minute, until fragrant.
  3. Add the tomato sauce, basil, oregano, thyme, and salt and pepper to taste. Simmer on low for 20 minutes.
  4. When lentils are done cooking, add them to the sauce and simmer for an additional 10 minutes.
  5. In a separate pan, add the remaining tablespoon of olive oil and saute the zucchini pasta for 5 - 10 minutes, until desired tenderness is achieved.
  6. Divide the pasta among two plates and top with lentil marinara. Serve hot!!
  7. Enjoy!

Please keep in mind ... 

Fresh zucchini will often lose moisture as the zucchini pasta cooks - so be sure to drain any liquid that has built up in the pan. The recipe holds well as leftovers, but the zucchini does tend to release extra moisture as it sits so be sure to drain pasta before serving.

Clean Eating Sweet Potato Chips

This is so simple and easy and SO much better than a bag of anything!!  I like to switch it up between these and my Sweet Potato Fries!!

What You Need:

  • Sweet Potatoes (I only used 1 and that was perfect to serve two!)
  • Olive Oil
  • Sea Salt & Freshly Ground Black Pepper to Taste
  • Optional spices: garlic powder, parprika, etc.

What You Need To Do:

  1. Preheat oven to 375 degrees F.
  2. Use a mandolin, or slice potato VERY carefully!!
  3. Lay flat on baking sheet.  Use brush to lightly coat each chip.  Sprinkle with sea salt, pepper and any other optional spices.
  4. Bake 10-15 minutes or until crispy or golden-brown.
  5. Enjoy!!

Homemade Whole Wheat Hamburger Buns

I went on this bread making binge earlier this year, and it was probably one of the most appetizing and amazing things that I could have done!!

So it only seemed right to whip up a batch to go along with my Clean Eating Sloppy Joe's for dinner last night! 

Yes - it does take a couple extra hours than just running the the grocery store.  No, you will not regret it!!

What You Need:

  • 1 package active dry yeat (2 1/4 tsp)
  • 1 cup warm water (120F)
  • 1/2 cup warm milk, I used Almond Milk (120F)
  • 1/4 cup vegetable oil
  • 2 Tbsp honey
  • 1 large egg, room temperate, lightly beaten
  • 1 1/2 tsp. salt
  • 4-4 1/2 cups white whole wheat flour
  • 1 egg white, lightly beaten
  • Sesame seeds (the one ingredient I didn't have last night!) 

What You Need To Do:

  1. In a stand mixer bowl, dissolve yeast in warm water.  Let stand 5 minutes, then stir in milk, oil, honey, egg, and salt until combined. Add 4 cups flour and mix on medium speed until smooth and elastic., until a dough forms.  Continue mixing until dough pulls away from sides, adding more flour if necessary.
  2. Turn dough onto a floured surface and gently knead until smooth and elastic.  Place in a grease bowl, turning once to grease top.  Let dough rise 1 1/2 hours or until dough has doubled.
  3. Punch risen dough down and divide into 10-12 equal pieces.  Shape each piece into bun shape, and place on parchment paper-lined baking sheets.  Make sure to space each bun about 4 inches.
  4. Cover buns with plastic wrap and let rise 20 minutes or until puffy.  Remove wrap and gently flatten each bun slightly.  Cover bunts with plastic wrap again and let rise an additional 30 minutes, or until doubled in size.
  5. Brush buns with beaten egg white and sprinkle sesame seeds. 
  6. Bake hamburger buns at 375 degrees F fo 18-20 minutes, or until golden-brown.  Cool on a wire cooling rack.
Store Hamburger buns in an airtight container at room temperature up to 3 days.  Buns may also br frozen up to 1 month.

Clean Eating Sloppy Joe's

This is a delicious and healthy alternative to that can of the processed usual stuff!  There is no way that this wouldn't be completely kid approved as well!

I decided to go a couple extra miles with this meal to serve it up so I knew every single ingredient!! Homemade Whole Wheat Buns and Sweet Potato Chips!  Let me tell you, it was worth EVERY single second .... and hour of it!!

What You Need:

  • 1 pound lean ground turkey 
  • 1 15 oz. can tomato sauce, not sugar added
  • 1/2 cup clean ketchup
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced

What You Need To Do:

  1. Add turkey meat to large pan, and cook over medium heat.  
  2. Once meat is cooked (internal temperature of at least 165 degrees F), add tomato sauce, ketchup, garlic powder, onion powder, green & red bell pepper.
  3. Stir well to combine, and heat thoroughly.
  4. Serve on Whole Wheat Hamburger Buns - because they are delicious!  Or any store bought clean hamburger buns.  
  5. Enjoy!

Banana Oatmeal "Muffins"

A simple and delicious recipe for a sweet snack, that will still keep you on track!  Perfect to throw in a bag and take on the go!

What You Need:

  • 3 Bananas, very ripe, mashed
  • 1 cup Unsweetened Vanilla Almond Milk (Soy, Original Almond, Cow Milk, any milk should do the trick!)
  • 2 Eggs
  • 1 Tbsp Baking Powder
  • 2 Cups Old-Fashioned Oats
  • 1 tsp Vanilla Extract
  • 3 Tbsp Mini Dark Chocolate Chips

What You Need To Do:

  1. Preheat oven to 375 Degrees F.  Spray muffin tins with baking spray, if using liners, spray inside of those as well!
  2. Mash Bananas, and combine remaining ingredients (except for chocolate chips) and stir until thoroughly mixed.
  3. Add chocolate chips and mix thoroughly.
  4. Evenly divide batter among muffin cups, approximately 16-18, half full.
  5. Bake for 20-30 minutes, until outside is golden brown and firm to touch.
  6. Let cool in pan for 10-15, then transfer to cooling rack to completely cool.  
  7. Enjoy!
