Pasta Salad

So THIS is the whole reason I looked up the recipes for a Homemade Healthy Italian Dressing!  It is so simple and delicious!! A perfect treat for a hot summer day or night!  There are so many different variations of pasta salads that can be made, with different veggies, or different kind of pastas like I did!  My Dad is visiting Michigan from San Francisco, and he is a vegan, so I made a separate bowl just for his with Quinoa pasta!

First, boil your pasta!  Cook according to directions on box, whether it is 'regular' rotini or something else like this Ancient Harvest Quinoa Garden Pagodas! After I strain the pasta, I like to spray it down with cold water and toss it in the strainer to jump start the cooling process!

While the pasta is boiling, start chopping up your vegetables! 
  • 1/2 Green Bell Pepper
  • 1/4 Yellow, Red & Orange Bell Peppers
  • 1 1/2 cups Broccoli
  • Medium size Cucumber or I use 1/2 English Cucumber
  • Roma Tomato
  • 1/4-1/2 cup Red Onion
  • Can of Sliced Black Olives
Once all of my veggies are chopped, I like to give them a good stir, and then slowly combine with the pasta.  Then it's time to add Italian Dressing ... I use anywhere between 1/4 - 1/2 cup.  Don't want it to be drenched like the kind you buy from the deli counter!

I am getting ready to take the four hour drive to Chicago to send my Dad off at the airport really early tomorrow morning.  We are going to pack a cooler with both of our pasta salads, and some other vegan-friendly (and not ... :) ) healthy snacks and food!  If you Fail to Plan >> Plan to Fail!

French Green Lentil Soup

I had a little extra determination finding a delicious recipe for a French Green Lentil Soup because not only did I have the lentils (a gift rom Mom...) but I had a brand new BEAUTIFUL Martha Stewart Cast Iron Crock Pot (it matches my dining room walls!) and it took me 6 MONTHS to open and use it for this ... Shame on me!!


  • 3 Tablespoons extra-virgin olive oil
  • 2 cups chopped onions
  • 1 cup chopped celery stalks (and chopped celery leaves for garnish)
  • 1 cup chopped carrots
  • 1 cup sliced mini bella mushrooms
  • 4 cups (or more) vegetable broth
  • 1 1/4 cups lentils, rinsed, drained
  • 1 14 1/2-ounce can diced tomatoes in juice
  • Balsamic Vinegar (optional)


  • Heat oil in heavy large saucepan over medium-high heat.  Add onions, celery, carrots, mushrooms, and garlic; saute until vegetables begin to brown, about 15 minutes.  Add 4 cups broth, lentils, and tomatoes with juice and bring to a boil.  Reduce heat to medium-low, cover, and simmer until lentils are tender, about 35 minutes.
  • Transfer 2 cups coup (mostly solids) to blender and puree until smooth.  Return puree to soup in pan; thin soup with more brother by 1/4 cupfuls, if too thick.  Season with salt, pepper, and a splash of vinegar, if desired.  Ladle soup into bowls.  Garnish with celery leaves.  ENJOY!!

Sweet Potato Fries!! ...bye, bye drive-thru!!

I have always been a little hesitant of Sweet Potatoes for some reason ... but as soon as I made a batch of these bad boys -- I have become addicted!!  Absolutely delicious and such a better & healthier alternative to some greasy, soggy & chemical who-knows-what-is-really-in-them fries from the drive-thru!

》Cut desired amount of sweet potatoes into 1/4 inch "fry slices."  (One good sized one is a good amount for a couple healthy servings.  If I made anymore, I would be in trouble!!)
》Put cut fries into freezer Ziploc bag and drizzle 2 Tablespoons EVOO, close bag and toss until fries are coated.

》Arrange fries on baking sheet, and season with Paprika, Garlic Powder, Salt & Pepper.
》Bake at 450° for 20-25 minutes or until fries are browned.  I like to flip them about half way through and season the other side as well.

》Cool (not for too long!) and ENJOY!!

Healthy Italian Dressing Recipe!

So not only did I grow up with a mother who lived a healthy lifestyle, which trickled down to me - whether I liked it or not! - and luckily it has rubbed off on me tremendously!  I haven't been a health conscious freak all of my life, but since ordering my first Challenge Pack from Beachbody, it make me realize that I was already wired with (most of) the fundamentals of a healthy lifestyle as far as knowing how to cook and bake, most already being from scratch and healthy -- because that is how Mom always did it!  So all I really had to add in was the determination and motivation to follow my FOCUS T-25 work out schedule .. plus of course continuing and bettering myself in the kitchen!

We had an extremely long winter here in Michigan this year, so spring sprung late.  But as soon as it did, we started grilling out and having friends over for BBQ's!  And of course all winter I was looking at delicious food on pinterest, making plans and salivating waiting for all of these delicious summer meals!  And one of them ... PASTA SALAD!!  I went grocery shopping, and got all of the ingredients EXCEPT for the Italian Dressing.  I have never been a fan of many dressings, usually just Catalina or French when I was young.  Ranch disgusts me, so I usually just had vinaigrettes or oil & vinegar.  So back to why we are here ...... Healthy, Homemade Italian Dressing!!  I looked up some recipes, kept a couple things out, but I already had everything I needed in my spice cabinet!  So here you go ... !

Italian Dressing Mix

  • 1 1/2 teaspoon garlic powder
  • 1 Tablespoon onion powder
  • 2 teaspoon oregano
  • 1 Tablespoon dried parsley
  • 2 teaspoons sea salt 
  • 1 teaspoon thyme

Shake all ingredients together, and store in an air tight container.  (I absolutely love all of my Mason Jars for stuff like this!)

To Make Italian Dressing

  • 2 Tablespoons dry mix
  • 1/4 cup vinegar (I prefer red wine vinegar)
  • 2 teaspoons water 
  • 1/2 cup olive oil

Stir (or shake if you use a Mason Jar!) all ingredients together and enjoy!
